Sugar-free Dark Chocolate

FOOD JOURNAL – I’m still not 100% back on track with food planning so the only snacks I had to keep me energized were Grapes and Sugar-free Chocolate. I had too much Chocolate because I couldn’t get to dinner early enough. Argh!

FOOD JOURNAL – The past 2 weeks have been really rough for me with the possibility of Breast Cancer hovering over my head.

But the lumps turned out to be  benign according to the Biopsy results which I got yesterday!

The good news has put me and my Food Journal back on track!

Breakfast was shared with Ron : Turkey Pastrami, Scrambled Eggs, Yogurt, Grapes and Coffee!

The Double Lumpectomy went well even if I fell asleep at the start of it, LOL! I took my Doctor’s word that I was a good girl and the Lumps looked benign. He believes the Biopsy will confirm that.

I woke up in the recovery room feeling like two giant tooth aches. It took them 20 minutes to find a painkiller that would bring my peace back. I thought I heard a nurse say that my resistance was high. Whatever that meant.

Oh, when they wheeled me back to my room after the double Lumpectomy, I saw a big basket of FLOWERS! From my UCB Family 🙂

Thank you so much guys, the flowers cheered me up! Thanks for being so thoughtful 🙂 it was a scary time for me discovering these lumps and having them cut out. But knowing that there are people who care gives me COURAGE and JOY… I love you all very much!

FOOD JOURNAL – We’ve been having the same breakfast for the past three days since I made such a huge batch of Homemade Sugar-free Chicken Longganisas last Tuesday and we need to eat it all up before I experiment on improving the recipe. I promise to post it as soon as I’m satisfied with the taste…

FOOD JOURNAL - Breakfast: Home-made Chicken Longganisa, Scrambled Eggs, Nonfat Plain Yogurt, Grapes and Coffee

FOOD JOURNAL – I’m developing a recipe for a healthy home-made Chicken Longganisa minus the Sugar, the Saltpeter and the MSG. Today’s attempt was pretty good, the hubby liked it but I still need to tweak the recipe to give it a slightly stronger kick.

Once I’m happy with the recipe, I’ll be posting it on this blog!

FOOD JOURNAL - Breakfast : Tilapia Longganisa, Scrambled Eggs, Rye Oatbran Crispbread, Cheddar Cheese, Plain Low Fat Yogurt, Grapes and Coffee

FOOD JOURNAL – Woke up just very slightly hung over from last night’s illegal meal. Breakfast wss Tilapia Longganisa, Scrambled Eggs, Rye Oatbran Crispbread, Cheddar Cheese, Plain Low Fat Yogurt, Grapes and Coffee.

The Tilapia Longganisa was found by Ron at SM Marikina. It was tasty and excellent EXCEPT for the Sugar content. It listed Sugar as its third or fourth ingredient so its actually an illegal food.

I’m on diet break now and will resume with strict protocols tomorrow ….

FOOD JOURNAL - Early Dinner : Spicy Corned Tuna Guisa and Stir-Fried Broccoli

FOOD JOURNAL – Early Dinner at Channel 9 while waiting for my two dear hearts, Ron and Diandra. I wrote to a local fitness magazine telling them about my weight loss story – who knows? They might feature me! While waiting and writing I enjoyed a dinner of Spicy Corned Tuna Guisa and Stir-Fried Broccoli…

But I was still hungry so I brought out some Grapes – my favorite Red Globe Grapes and WIPED THEM OUT!

This is the problem when I lack sleep. I need more energy to keep awake so I eat more. I was forced to sleep for only 3 hours last night because of a problem with my ACR Renewal at Immigration that I had to started to 1st thing in the AM today!

FOOD JOURNAL – How I Tweak the Dukan Diet to Make it More Filipino

image

FOOD JOURNAL - Dukan Galette, Gourmet Daing, Plain Yogurt, Grapes and Coffee

FOOD JOURNAL – Because the Dukan diet is very French, its can be challenging to follow it to a tee. But it is also a challenge to ‘Filipino-ize’ his diet and make it more convenient for a Pinay like me. One of my ‘Filipino-izations’ of Dr. Dukan’s Diet is Gourmet Daing which is not just a ‘Filipino-ization’ but also a breaking of Dukan’s taboo on Fat because Gourmet Daing is basically dried fish in oil and as we all know oil IS Pure Fat.

That is the main area where I disagree with Dr. Dukan. I believe his diet is too strict with Fats. IMHO, there is allowance for a bit more Fat, the healthy Omega type, in his diet.

While I’m not a doctor or a dietician, I am an ex-mildly-obese woman who successfully lost weight even with a good amount of Fat in her diet.

The kind of Fat I enjoyed while losing weight was from Full-Fat Yogurt, Full Cream Milk in my Coffee, Olive Oil, fat from Fish like Salmon and Tuna and even the bottled type swimming in Corn Oil like Gourmet Tuyo.

Occasionally, I would eat dark Chicken meat but always removed the skin first. And there were times when I would enjoy Curry which uses Coconut Milk – a food very high in Fat. To lessen the damage I would choose dry Curry dishes or avoid eating as much as I could of the Curry sauce.

The only downside to Tuyo and Daing is the salt content. I deal with that by drinking lots of water to flush it out, exercising to sweat it out and eating other low-sodium food to balance it out. At home we also cook with Pan Salt, a salt substitute.

So I have carefully tweaked Dr. Dukan’s Diet by ‘Filipino-izing’ it and being less strict with Fat and IT IS WORKING! I have been able to maintain my current weight of 137.5 lbs since mid-January (its now near the end of Feb). My original weight as of August last year (2011) was 170lbs.

Breakfast for today – Dukan Galette (sweetened with half a tsp of authentic Maple Syrup), Gourmet Daing, Plain Yogurt, Grapes and Coffee…
